There are innumerous cheese breads recipes in Brazil, and all of them have two things in common: they are all made with cassava starch (a gluten free substitute of wheat flour) and grated cheese and they are absolutely delicious.

The recipe I am sharing here, is an easy-to-prepare twist of the original; it is the cheese-bread waffle recipe.

Without further ado, let's get to it.

You will need the following ingredients for 4 lrge waffles:

500 grams of tapioca (aka Manioc or Cassava) starch

500 grams of grated cheese (I suggest sharp chedar or similar)

1 cup melted butter

2 cups of milk

1 pinch of salt

Note: There are typically two types of Cassava starch; the sour and the sweet. You can use either or both, but understand they will have an impact on the texture of the bread; while the sour starch brings a more crunchy texture, the sweet startch will bring a more elastic texture. Some people will mix both types of starch in a 50/50 ratio. Do not be intimitated by this; no matter what you use, the result will be terrific.

These are a couple of examples of brands you can find in your local international market.

With all ingredients set aide at the right amounts, all you got to do is to put it all in a blender and turn-on your waffle maker.

Once the waffle-maker is hot, pour a portion of the mix in it and wait for the result.

Eat it plain, or add butter and Mapple Syrup or Honey.
